Busy, Busy, Busy!!!
Travelling & flying month AGAIN … Sigh!!! This round predicted at least 8 flights within a month’s time. It’s neither for work nor for a holiday, it's just how we normally use to travel for the pass year and that’s very tiring!! Sometimes I get tired of asking myself where would I be tomorrow too but as long as we could stay together as a family, I think it's all worth it :)
And also, I JUST realised that I will be flying alone with Angel in just a few day’s time!! And yes, 'Alone = Me + Angel only'!! Oh dear ……. She has not been a NORMAL easy baby since birth and normally when we travel on air, me, hubby and my mom will take turns handling her ‘endless crying’ and ‘back arching’ which at the end of the day, all of us was totally drained out. Not only when she was on the aeroplane, the same thing happens whenever we go out too where she will fuss, throwing tantrums, crying, kicking and screaming her lungs out most of the time just because she wants to do things her way, her dangerous and forbidden way and she mean it!! She won’t tolerant when we advise her nicely, coax her with toys, distract her attention with food, etc …. when she wants to do it, she MUST get it NOW and she is a real stubborn when it comes to things that she wants and want them to be done!!! So normally, when you heard that a baby (toddler now) is screaming and crying in the airport or on the plane for no reason, yup, you can say ‘Hi’ to us :P Normally our infamous Angel boarding the plane will suddenly become all ‘well known’ after the plane landed at our destination, people or tourists will start come to say ‘Hi’ to the cry baby and tell her “You have not been a good girl today, aren’t you?” LoL But what they didn’t know is that it happens almost every day in our life when we were out LoL.
If we don’t let her do it her way, she will cry out fierce and loud throwing tantrums on the spot, but if we give in and let her do as she wished but when it’s time to make a move, she will cry even louder, kick and shout even ferociously! Nope, we have tried but she just doesn’t understand or won’t take 5 minutes more / next time / we will do that again later, etc. Sometimes distracting her attention MIGHT work but most of the times, she is pretty determine on what she wants. So it’s really a loss-loss situation for us. Even my mom who is an expereince granpma said that she has never felt so ‘challenging’ handling a young kid before. Same saying came out from 2 of Angel’s previous nanny, who were happily waving ‘bye-bye’ to her after a good 1 month of service (coz can’t cope with Angel around) and another nanny even stop taking care of her after her 1st day LoL Phone calls is what I normally would received in every few days time telling me to bring my baby for a check up coz she is constantly crying - seek for attention and always wanted to get what she wants.
“With her around, I can hardly cook, I can hardly look after the other kid or even go to the toilet! I am afraid that you have to find somebody else, I am so sorry …..”
Yes, that’s the actual sentences coming out from Angel’s ex-nannies!! I used to left Angel with my PIL twice to get some errands done, but phone calls will normally rings in less then half an hour’s time asking me to the rescue coz they can’t cope LoL …… talking about ‘high-maintenance toddler’?? I have one at home! :) Only my parents can manage her so far but they were living at another state! So normally Angel would tag along wherever we go, and there will be at least one scene that Angel would be carried by hubby the way shown on the very first picture below when we go out while she cries, kicks and arches in retaliation. Only Hubby have the strength to deal with her crankiness but told me he was ‘exhausted’ after 5 minutes of exercising his arm muscles with a struggling kid crying and screaming her lungs out in his care. Or else, we won’t be getting anything done or going no where for the entire day.
So in few days time, I will be in that challenging situation, ALL ALONE for the very first time, carrying Angel’s heavy diapers bag and our important documents with Angel’s toys, drinking water, milk powder, nappies, solid etc. I will be leaving Angel’s stroller behind to coz I have no extra hands for that!! To make things worst, I need to endure the entire process from waiting in airport for 2 hours before the flights, checking in, boarding, on plane, landing and then check out with an extremely heavy luggage and a fussing baby in tow ALL ALONE in the airport for FEW HOURS all by myself, AND AGAIN check in again, boarding again, on plane again then finally check out!!!! That is a lengthy 11 HOURS of ‘marathon’ in total before I could see my rescuer at the finishing point!!!! Oh dear …. I really do not know or cannot imagine how I am going to handle that! Just by thinking of the entire processes making me feel so ‘hopeless’ + cold feet + cold sweat pouring down but I have no choice this time :( I have been accomplishing 2 years of MISSION IMPOSSIBLE all alone and I know I will have to do this for once sooner or later unfortunately. I just hope that my cutie pie Angel would ‘not be her old self’ that day!!! *praying*

Homemade Vegetable Chicken Nuggets
Angel does not likes her vegetable very much so I usually will hide them inside her ‘meat’ and so far, I am glad that it works ‘most of the time’ because as you can see, the vegetables can’t be separated from the meat so it’s either eat it or don’t eat it at all LoL. I personally love this Homemade Vegetable Chicken Nugget very much because it tastes really good. Angel loves them so much and even hubby asked me to make more for him if I were to make them for Angel again. But the texture of the nugget is much softer then the normal nuggets (because I use 1 small whole egg) and I think it is suitable for young toddler like Angel who doesn’t chew much. Just in case you are interested to know, that’s how I make my own version of Vegetable Chicken Nuggets.
** (P/s: This healthy version of nuggets are not the same as the KFC nuggets, etc :P )
Homemade Vegetable Chicken Nuggets
Ingredients:
- 200g Mince Chicken Breast / Pork Mince
- 1/5 Yellow Onions – finely chopped
- 2 Shitake Mushrooms - finely chopped
- Any Vegetables (I use the stem of broccoli this round) – finely chopped
- 1 small egg
- Corn Flour
- Pepper
- Soy sauce to taste (I did not use any for Angel’s nugget)
- Garlic powder
Method
1. Mix all ingredients together and thicken with Corn Flour to form a slightly watery paste (for young toddler), let it marinate for ½ hour minimum.
2. Heat wok with 2 tbsp oil
3. Scoop mixture into hot oil, pan fried 2 - 3 minutes on each side until slighly golden brown / cooked
4. Eat alone or serve with rice / porridge / mash potatoes

For the Tomato Sauce version, that’s how I make my homemade tomato sauce
Homemade Tomato Sauce
1. Lightly boil whole tomatoes in boiling hot water for 1 minutes
2. Peel skin
3. Blend in a blender into puree (add few tablespoon of water if necessary)
4. Heat up wok with 1 tbsp oil, lightly brown 1 diced small red onions
5. Add in tomato puree bring to boil
6. Add in Sugar, Garlic Powder and Vinegar to taste (Optional)
7. Fold Vegetable Chicken Nuggets into sauce
8. Serve
* Or if you want a quick version, you can just use normal tomato ketchup instead.

Bento#2: Vermicelli Soup and Mix Vegetables
This is what I prepared for Angel’s lunch today. At first I only prepared the Vermicelli with Beet Root Soup, served with some shredded pork ribs, and since I am plan to incorporate vegetables into her every meal so I do not wish to break the rules so at the end, I added some frozen mix vegetables into her lunch for added fiber. Looks like the bento box which I got for her was just enough for the Vermicelli alone, huh? It does looks so big when I got them LoL No fancy decorations for her ‘almost – bento’ lunch this round as I am running out of time today :P Maybe next time ok Sweetie?? Although this looks simple but yet, took me an hour just to come out with this ….. ya, I know I am very slow :P
She loves the soup, she loves the meat, she like the vermicelli, totally crazy over those grapes but she didn’t really fancy her vegetables. However I manage to coax her to finished the carrots and the peas (of course I am eating along with her :P) but she just refused to ate those corns. I thought kids loves corn coz they are sweet?? Maybe my little girl has a strange taste bud. LoL Anyway, to be able to finish the portion of what she had just now is considering good enough for me.
When she really eats her meal and didn’t fuss and picky of her food as usual, I will be the happiest mom of the day :)

Angel’s 2nd Birthday
Time really flies, our little Angel is officially 2 now just in the blink of an eye :) This year we didn’t hold any special birthday party for her as we celebrated in a foreign land but we brought her for a one day tour to Dusit Zoo the weekend before her birthday as well as DreamWorld Thailand the weekend after her birthday as her birthday present (will blog about it separately if got time, So lazy lately :P :P). On her big day itself, we only had a simple dinner at the mall, celebrate with just the 3 of us and it feels great :) As Angel’s birthday falls on Thursday so hubby has to work as usual but in the morning, I cooked our little girl a traditional birthday meal - with red egg, drumsticks and mee suah (but I substitute it with vermicelli coz I can’t find any mee suah, mommy really tai-tao-ha LoL). She definitely loves the drumsticks and this is the first time she ate half of a hard-boiled egg which she usually don’t fancy at all. Maybe because the egg is different in colour that day??
Hubby rush back for dinner after work and we went to Paragon Mall for dinner. Hubby suggested Tony Roma’s but I don’t really liked Tony Roma’s and Japanese …. Hhhmmm, we always have Japanese food when we are out so finally, we went to Piri-Piri Chicken instead as I never tried Piri-Piri Chicken before :P The food was not bad actually and hubby loves my Piri-Piri chicken dish more then his Piri-Piri burger but it was real spicy. Angel also ordered a Honey Custard Chicken Breast as they don’t do kinds meal but I am glad we did coz I love this a lot, maybe because it’s not spicy at all?? :) After the meal, we went for another round of Swensen’s Ice Cream as usual coz the ice cream combination here taste really nice, much nicer then Haagen Daz and Baskin Robins for my preference actually. Have you tried Ice Cream with Sticky Rice before?? Hubby thought the combination was ‘very weird’ but after having his first trial, he was captivated ever since, so does our little Angel :P
We went to order this pretty 2 pound Vanilla Butter Cake for Angel’s birthday. Initially Hubby wanted a baby monkey cake (huh?? Why baby monkey?? Ya … I know it’s kind of cute too but …… ) and I was eying this Princess + Castle Cake and finally, we asked Angel to choose one and she pointed at my selection for some reason so Princess Cake it is :P But we was kind of shock when we opened up the cake at home, know why??? Notice any different with the cake there?? The bakery forgot to put on the Happy Birthday Wordings!!! Urrrgghhh …… hubby wants to get the cake back to the bakery but it will take another hour or 2 at least looking at the traffic jam so at the end, we just settled with as it is :( (Must always remember to check the cake next time :( )
When we sang the Happy Birthday song for our girl, Angel actually look kind of shock and asked us “No … No… No …!” Surprisingly when we taught her to blow out her candles, she manages to do it all by herself one by one even though it’s her very first time (1 years old don’t count as mommy blew for her) LoL After the cake cutting ceremony, Angel automatic dig into hubby’s piece of cake without even asking therefore on her 2nd birthday, Angel ate cake baked from a bakery for the very FIRST TIME!! Although I am not sure whether she has fully outgrown her lactose intolerance but I am glad that she is doing fine so far :). She absolutely loves the cake and keep on telling us “Nice ~~!! Nice ~~!!” with her mouth full of cream and give me a sweet smile and jumping for joy while helping herself with those cakes until I stopped her, afraid that she might developed rashes again if taken too much.
So here’s a part of birthday gifts she receive for her birthday and there is still more to come from Angel’s grandparents and also from all the lovely blogger mommies who are so thoughtful enough to sent our little girl a birthday gift, so touched *hugs* I will update with more pictures as soon as we return ya, promise! And thank you once again for your kindness in making our little girl’s 2nd birthday a memorable one too :) Although our celebration is simple but it surely was a memorable one for us and I am glad that we are able to celebrate her big day together as a family. My wishes for our little girl would be hoping that she will live everyday happily and grow up healthily :) And always remember that Daddy and Mommy love Angel very very much and forever it will be :)
