‘发糕’(Huat Kueh / Prosperity Cake) & Steam Banana Cake

Last week after I have read Alyse’s blog about how she makes ‘发糕’ (Huat Kueh / Prosperity Cake) herself, I am tempted to try too. So here is my first ‘发糕’ (Huat Kueh / Prosperity Cake) which was made last Sunday, the night before the 15th of Lunar CNY. Phew, I must say that I am very relief that my ‘发糕’ (Huat Kueh / Prosperity Cake) really raised so much *wipe sweat*. Angel loves this too and she finished 1 whole ‘发糕’ (Huat Kueh / Prosperity Cake) that night. Hubby was very happy that I know how to make this cake as normally during some special occasion, he will be searching high and low for this cake to do some praying rituals because they were selling like hot cakes :P The method of making this is very simple. Below is the recipe which Alyse provided in her blog. Thanks so much to Alyse for sharing this nice recipe with me :)

Ingredients:
10 tbsp of Self Raising Flour
5 tbsp of Sugar (I use 6 tbsp of brown sugar)
Water (I use 10 tbsp of water)
Food colouring

(I also add in 1/2 tsp of baking powder)

Method:
1) Mix Flour, Sugar and Water together until reached a consistency slightly thicker then a cake batter
2) Add in food colouring (and baking powder)
3) Steam for 10 – 20 minutes




And also, I have done Chow Times' Steam Banana Cake again but this time, with a proper flour weighing machine which I got before CNY ….. finally!!! (Last time I am doing it without a weighing machine for my flour … sigh!) I must say that once weighing all my ingredients accordingly for the very first time, I manage to get the right texture of a Steam Banana “CAKE” finally, not bread or kuih texture which I normally gets like my previous attempts, although I must say that all of them still taste as nice *Smile*.

Thanks for sharing the recipe! I didn't know that 'Huat Kow' is so simple to make, those cakes are quite pricey in the market (if compared to the ingredients involved), especially in PJ ...

the coloring is optional right? cos pasar malam sell these in white... so if i want it in white color, no need put coloring?

Wow.. your Huat Kueh recipe seems simple hor. How come my mum version so complicated?! Hmm.... You are lucky, u know! the first time result looks great already. My mum used to failed few times when she start to steam huat kueh. The cake was not "raise" or call it "smile" so ended up she throw all. Can't use 不发的发糕 to pray mah.

Like your homemade huat kou. turned out just nice, like what is selling out there. I wanna try it out, so simple, I am sure I can do it.. hehe, I want to show my girl mummy also can make cake, but I am not so understand about the step no 1, need to kacau kuat kuat? and the amount of water? So the measurement of 10 tbsp flour can only make 7 cakes or more then that?

Seeing your success in making the "huat ke", I'm also tempted to try, but I heard that it's quite difficult to make?

HN, yes … I also didn’t know that the prosperity cake can be made using such simple ingredients. You are so right, it’s so pricey in the market and PJ as well especially during special occasion where we have to wake up so early just to grab it before the other does, hahaha …

Rachel, Yes, I think the colouring is optional but normally those for praying are mostly pink in colour for those we bought, so I do it in pink too lo. It’s won’t be white I think …. A bit yellowish in colour it’s done. Do post up your prosperity cake and share with me ya :)

Doreen, Yes … I am in the middle of baking fever now but only simple ones la :) I think I need to ask from you the ‘si-fu’ leh. So what’s your latest recipe, can’t wait to see your post :)

Mummy Moon, Sure you can do it. Do post up your Huet Kueh ya :) I am kepoh and want to see, hehehe …… for step 1 no need to kacau kuat2 leh, just mix everything well then ok already. For water really hard to explain leh coz I just add it until the consistency like bb cereal / yogult. My friend made 12 prosperity cake with the recipe but I only manage to make 7, hahaha …. Really depends on the amount you pour and the cup cake size you use lo. Good luck ya :)

Esmeralda, thanks dear :) Normally I will do it after our dinner and when hubby have time to take care Angel so nowadays, I will only bath around 12 am, hahaha ….. You try the Huat Kueh la …. Very easy to make but some also said very hard to make it ‘raise’ so really depends leh. You try and show your 1st attempt with us here la :)

Olive, hehehe … then you are lucky coz ppl do not know how to cook or bake is consider lucky leh coz they don’t have to cook / bake, hehehe …..

Esmeralda, oh ... you no need to have the red colouring actually. It will look a bit yellowish if you do it plain. Looks good too :)
